The Cascade Inn French Toast
Ingredients: 1 unsliced loaf of cinnamon raisin or French bread 1 quart French vanilla bean ice cream, softened/melted 3 eggs, lightly beaten 1/2 cup orange juice 2.5 Tablespoons orange liqueur, such as triple sec Cinnamon, to taste (1 to 2 Tablespoons) 2 tablespoons butter Confectioners sugar Cut the bread into 1/2 inch slices. In a medium bowl whisk or beat the ice cream, eggs, orange juice, liqueur, and cinnamon until creamy. Preheat an electric frying pan to 250 ° degrees or heat a skillet over medium heat. Add 1 tablespoon of butter and heat until melted. Add as many slices of bread as will comfortably fit in the pan or skillet and fry until browned, about 4 minutes per side. Check frequently to prevent burning. Repeat with additional butter and slices.Sift confectioners sugar over the top. Garnish with orange slice and parsley and serve immediately with warm syrup. |
The Cascade Inn Caramelized Bacon
Ingredients: 12 slices (12-16 ounces) thick sliced bacon 1/2 cup packed light brown sugar 1/2 teaspoon ground red pepper 2 tablespoons water Preheat oven to 375 degrees. Line cookie sheet pan with foil. Place metal/wire cooling racks in pan and spray with non-stick cooking spray. Cut bacon in half and arrange in single layer on rack. Combine sugar, red pepper and water. Pour or brush over bacon. Bake in oven 20 to 25 minutes, or until browned. Using tongs or fork, remove bacon quickly from racks after finished baking, and allow to cool on plate…bacon will caramelize and get pretty sticky! Note Cards from The Cascade Inn
